Inflammation is the body's immune response to injury or threat, but chronic low-grade inflammation damages tissues over time and drives many modern diseases including heart disease, diabetes, and dementia. High blood sugar and high insulin both promote inflammation, creating a vicious cycle. Research shows that reducing carbohydrates often leads to dramatic drops in inflammatory markers like CRP and IL-6—sometimes by 40-50% within months.
